DIABETES is at risk of taking on epidemic proportions in the UK with more than two million people thought to have the condition.

And the numbers of people being diagnosed each year are rising dramatically. Recent studies have shown the rate of new cases is rising by more than 70 per cent, outstripping the United States of America.

While initially, those diagnosed may fear there are hundreds of forbidden foods in reality a diabetic diet is, in many ways, simply a healthy diet.

In the new book, Diabetes Recipes From Around The World, nutritional therapist Jane Frank has hunted the globe for recipes which are ideal for people with diabetes.

And she explains: “The key to successfully coping with diabetes is still self-management and the most important aspect of self-management is making healthy food choices. In this book I’ve collected together recipes from several different cuisines around the world, picking out recipes that help keep blood glucose on an even keel as well as being nutritionally balanced, tasty and easy to cook.”

In some cases Jane has adapted the recipes, taking into account glycaemic index, or sugar levels, carbohydrates and fats while, in others, she has simply discovered recipes ideal for diabetics.

Choices include Thai fish cakes, Mexican turkey mole, Indian tarka dahl, Egyptian broad bean salad, Greek apple salad and Japanese stir fry. And with a count of calories, protein, carbohydrates, sugars, fibre, fat and saturated fat on each recipe, those choices can be used by anyone attempting to manage a balanced diet.
