Cocktail of the week - The Summit

INGREDIENTS: One lime zest; four thin slices of fresh ginger, 40ml VSOP Cognac; 60ml traditional lemonade; cucumber peel.

Method: Prepare in an ‘old-fashioned’ tumbler, put in lime zest and ginger, add half the Cognac, lightly press the lime and ginger using a pestle.

Half-fill the glass with ice and stir well.

Pour in the rest of the Cognac, add lemonade and cucumber peel and stir.

You can also make a jug of this using the same proportions (three parts lemonade to two parts Cognac).
